Mignon meaning "small" as true  mignon are cut from the smaller tail end of the tuna fillet. Each piece is 1-2 inch thick. High heat is the usual method for cooking the fillet. Grilling, pan frying, broiling, or roasting is preferred.
 
 
 

 

 

 

 

 

 
Sashimi is fresh raw seafood, which is served and is sliced and elegantly arranged. Fresh fish is always used to make sashimi. It is not recommended to use frozen fish (unless the fish is frozen for a temperature of -60 degree celcius), because it looses the subtle flavors in the fish. There are various cuts. Whether the fish is cut thick or thin, its cut enhances the flavors on the taste buds. Sashimi is usually eaten with soy-sauce and wasabi - Japanese green horseradish powder.
 
 
 

 

 

 

 

 

 
This is the fattiest of the tuna. In Japan, tuna are graded and priced according to fat content- is most priced- and toro, cut from the tuna's belly, is usually the most expensive item on a sushi menu.
tuna paves are made from belly-flap of fresh tuna. An excellent choice for barbequing or grilling or pan frying. It is a luxurious and tasty delicacy well worth its price. Tuna paves are rich in fat. Its richness and tenderness approach that of butter.

The bamboo skewer can be further stuffed with vegetables such as capsicum, cherry tomatoes, peppers, red onion and mushrooms. Brush with a low fat marintaed of your choice and grill away. Grill vegetables by themselves, either on skewers or in a basket. Brush with a little vinegar to enhance the flavor. Frozen Tuna is processed by blast or brine freezing whole-round or gill & gutted tuna. Given the unique styled same-day fishery that is predominant in Maldives, processors and traders of fish does not differentiate the land or sea based freezing that is employed. Main frozen species include Katsuwonus Pelamis (Skipjack Tuna) and Thunnus Albacares (Yellowfin Tuna)

Cooked frozen loins are increasingly becoming the standard of raw material used for canning in most of the European canneries, as opposed to the utilization of whole fish. Black-tip Shark Fins
We offer one of the best ranges of Blacktip shark fins which is the most common type of shark found in the Maldivian waters.. Blacktip sharks are fairly large and stout and are grey in color with black-tipped fins. The flesh of this shark is dried or salted and used for consumption as a meal. Their skin is also widely used for the production of leather and its liver for oil.
 
Mako Sharks
Our range of sharks includes Mako Sharks (Sopan) which is known to be incredibly pelagic oceanic swimmers occasionally found inshore. In warm tropical oceans, these Mako sharks swim deep below the surface as they prefer cool water.
 
These mackerel sharks apart from being an incredible swimmer they easily leap out of the water. The short-finned Mako sharks (Isurus oxyrinchus) has a conical snout and long gill slits. They are dark grey-blue in color on the top and white on its belly. This species has an average length of 5-8 feet (1.5-2.5 m) long but can reach 12 feet (3.7 m) long, weighing about 1,000 pounds (450 kg). Known as the bonito and the blue pointer, they are in great demand from our customers.
 
Hammerhead Sharks
We export a wide variety of Hammerhead sharks to all our esteemed clients located in various parts of countries. These Hammerhead sharks are most commonly found in warmer waters along coastlines and continental shelves.
